Mushroom Banitsa with Kupani Kori


Banitsa is a traditional Bulgarian pastry. It is usually made with eggs, Bulgarian white cheese, and Bulgarian yogurt. We decided to experiment a bit and put some mushrooms and other delicious ingredients in it. In addition, we used a special type of filo dough called Kupani Kori (Washed Pastry) traditionally made in the Rodopi Mountain region.  The result was amazing so we advise you to try it out sometimes when you are in Bulgaria.
